Zelda-Inspired Thai Beef Stew

This will be the first recipe in a short series I devised. I am a pretty big gamer in my free time and LOVE the Legend of Zelda series from Nintendo! This post and series are purely just my take and because I’m excited about the new game coming out soon! So. This is not an advertisement and I’m not getting paid by Nintendo or anything like that.

This first recipe is my riff on the “Spicy Meat Stew” which is one of many recipes you can create in the game. Now, if you’ve played Breath of the Wild, you’ll know that the ingredients listed for the recipes can be…lacking. So this recipe is my spin on a Spicy Meat Stew because the original – made with milk, meat, and salt – just sounds plain, old awful. For that, we’ll be making this delectable Zelda Inspired Thai Beef Stew with carrots and broccolini instead. We’ll get some Thai themes going with coconut milk and red curry paste. A kick of spicy from the red peppers and umami flavors from adding broth and veggies will help fill the meal while, I hope, still being true-ish to what the game offered. We get a spicy, hardy, creamy, and irresistible dish – perfect for anyone looking to quest around Hyrule Field.

Zelda Inspired Thai Beef Stew

Ingredients
  

For the Thai Beef Stew:

  • 1 lbs Stew Beef (cut into cubes)
  • 15.5 oz Coconut Cream
  • 3 tbsp Red Thai Curry Paste
  • 8 oz Broccolini
  • 1 Large Onion (sliced)
  • 2-3 Carrots (peeled & sliced in circles)
  • 5-6 cloves Garlic (minced)
  • 1/2 cup Beef Broth
  • Salt (to taste)
  • Olive Oil

Instructions
 

For the Spicy Beef Stew:

  • To start, salt the raw beef well and heat a pan with oil until the oil begins to smoke.
  • Carefully add the beef to the pan, searing the edges. 1-2 minutes per side. Remove to a plate.
  • In the pot, add some more oil and saute the carrots. Once the carrots brown a little, add onions and garlic and saute to cook the onions through. They should still look like they have a crunch to them but don't smell raw.
  • To the vegetable mixture in the pan, add the curry paste and fry for a few minutes. Then add the coconut cream slowly to the pan. Give the mixture a stir and be sure to dissolve the paste while scraping up the bits from the bottom of the pan.
  • Bring the mixture to a boil then reduce it to a simmer. Once at a simmer, add the beef and broccolini. Allow the mixture to simmer for 15-20 minutes to allow the mixture to thicken. If the mixture thickens too quickly, without allowing the beef and broccolini to cook through, add the broth in small portions, to help thin the sauce out.
  • Once the stew is finished, serve it hot with bread or rice, and enjoy!
