Salmon Bites Bowl

This Salmon Bites Bowl is such a great recipe! Salmon has always been a fan favorite in my house. I feel like the fish is versatile, healthy and so easy to cook that it’s usually on our menu at least once a week (usually Fridays to avoid microwaving leftovers!). I love salmon in all its forms and love how you can throw pretty much any seasoning you’d like on it, and turn it from Italian to Mexican, to Indian, or any other cuisine style you might be looking for.

Here we’re going for a poke-style bowl but cooking the fish which I think keeps things easy and ready for leftovers (on the weekend!). Here we pair salmon with colorful veggies to make a great, healthy salmon bowl! I love how quickly this recipe comes together. We’re really just chopping a handful of veggies (which you can totally mix and match to your preferences) while your salmon is cooking. I especially love the salmon bites here – perfectly bite-sized chunks of salmon which means it’s easy to work with AND cooks up nice and quickly. We used the air fryer but this works so well and easily with a nice pan fry situation. Once all the ingredients are on the plate, we mix up a quick yum yum sauce to make a salad dressing/drizzle that really pulls the whole bowl together.

Equipment

  • 1 Air Fryer

Ingredients
  

  • 1 lbs Salmon (cut into bite-sized pieces) Skin removed
  • 2 cups Bok Choy (roughly chopped)
  • 2 cups Purple Cabbage (shredded)
  • 1 cup Carrot (shredded)
  • 1 cup Edamame (shelled)
  • 2 cups Rice (cooked)
  • 3 tbsp Mayonnaise
  • 1 tsp Sriracha
  • Chili Oil (for serving) optional

Instructions
 

Cook the Salmon

  • In the air fryer: Spray a little oil and add your salmon bites into the basket with some salt. Spray a little oil on top as well. Cook at 400 degrees for 5-6 minutes or until the salmon is cooked through.
  • If you're using the stovetop: To a hot pan, add your salmon bites. Cook on medium heat for 3-4 minutes on each side. Be careful not to disturb them to get a nice char on the salmon pieces.

Make Yum Yum Sauce

  • For the yum yum sauce: To a small bowl, mix the mayo and sriracha together. For a hotter taste - add a little extra sriracha. If you need to cool it down - a little more mayo. Add more of each until you get your preferred pink shade.
  • Finally, add your salmon and yum yum sauce together, mix gentle to coat the fish. Top the fish onto your veggies bowls. Drizzle some chili oil on top, if desired and serve!

Build the Bowls

  • Ok! This one is super simple - first, we'll assemble our bowl. Evenly add all the chopped veggies into plates/bowls.
  • Add the Salmon and enjoy!
