Crunchy Bok Choy Salad with Peanut Dressing
A simple bok choy based salad with a peanut butter dressing.

For the Salad:
- 5 bunches Baby Bok Choy (chopped)
- 1.5 cups Purple Cabbage (shredded)
- 1 cup Carrot (shredded)
- 1 cup Edamame (shelled)
- 1/3 cup Cashew
- 1/4 cup Green Onion (thinly sliced)
For the Peanut Lime Dressing:
- 3 tbsp Peanut Butter
- 4 tbsp Soy Sauce
- 3 tbsp Lime Juice I do about 5 tbsp, just depends on if you like the tartness
- 1-2 tsp Sriracha
- 2-3 dashes Fish Sauce (optional)
For the Crunchy Boy Choy Salad with Peanut Butter Dressing:
In a large bowl, add all the salad ingredients and toss to combine.
In a jar, add all the dressing ingredients together and stir or shake until evenly combined. I like using a mason jar so I can pop a lid on it and save any leftover dressing for another time.
When it's time to serve the salad, pour over the dressing and mix until evenly combined. Serve up as your starter or part of the main!
