First, cut up your onion into thin slices and add them into a heat-safe jar with a lid. I really like mason jars for this.
Next, we will start on our vinegar. In a small saucepan, add the vinegar, chili pepper flakes, honey, and salt. Bring the mixture to a boil. Once it's boiled and the honey is dissolved (might require some stirring), remove it from the heat.
Pour the vinegar mixture into the jar, ensuring the onions are completely covered.
Allow to cool for a minimum of 30 minutes, then enjoy!
