Loaded Breakfast Quiche

We’re doing breakfast again! I always forget about quiche but whenever I make one, it’s always just as glorious as it sounds. A buttery crust, eggs, vegetables and protein, and best of all, a hot breakfast – which can sometimes just make a work morning so much better. I love this Loaded Breakfast Quiche because it’s loaded with crumbled chicken sausage, kale, grape tomatoes, and cheese. The whole thing gets quickly mixed together before being placed in the oven. We let it slowly bake and end up with a beautiful, rich, and filling breakfast option.

This quiche cooks well in a deep dish pie crust.

Process

We’ll start by pre-heating the oven to 350 degrees Fahrenheit and prepping our ingredients – chop up your chicken sausage, kale, and cherry tomatoes.

I like to brown/pan fry the quiche ingredients in my All-Class skillet – start by frying the chicken sausage before adding the tomatoes and kale. I like to wait until the chicken is JUST about finished before I toss in the tomatoes to get a blister on them. Then add the kale for just about 30 seconds in the end so they turn a nice bright green. Remove them from the heat.

In a mixing bowl, we’ll mix together eggs and milk before adding in our sautéed ingredients and cheese. Mix everything well so it’s evenly mixed. The consistency should look pretty lumpy.

Make sure you mix the milk and shredded cheese evenly.

Pour the mixed ingredients into a thawed deep dish pie crust. Place, uncovered in the oven for 1 hour. If you prefer to have a slightly runny center, 50 minutes.

Ingredients
  

  • 4 Eggs
  • 1/2 cup Cheddar Cheese
  • 1 cup 2% Milk
  • 16 oz Chicken Sausage
  • 1 cup Kale
  • 8-9 Grape Tomatoes, halved

Instructions
 

For the Quiche:

  • Preheat the oven to 350 degrees F
  • Rip up the sausage (or rough chop) and cut the grape tomatoes in half
  • Fry up the chicken sausage, tomatoes and kale - you'll know you're good when the tomatoes have some little scorch marks and the sausage has browned. Be sure to add the kale at the end so it has a chance to touch the heat but not overcook on the stove. Remove from heat to a plate or bowl.
  • In a mixing bowl, mix together eggs, milk, and cheese. Beat in the eggs to incorporate.
  • Add in the fried chicken sausage, tomatoes, and eggs. The mixture should look pretty lumpy.
  • Pour into a ready-made pie crust, and add a little extra cheese on top, if desired (it's awesome).
  • Place in the oven, center rack, and bake for 1 hour. It's done when you poke a fork into the center and it comes back dry.
